Turkish Delight, or “lokum” as it’s called in Turkey, is a centuries-old confectionery known for its soft, chewy texture and delicate sweetness. But how exactly is this iconic treat made? In this article, we take you inside our Gemilik production facility in Bursa to explore the step-by-step process of making traditional handmade Turkish Delight.
1. Natural Ingredients First It all starts with the highest quality ingredients — natural sugar, water, corn starch, and real flavourings like rose, pomegranate, and premium pistachios. No preservatives, no artificial colourings — just authentic taste.
2. Cooking to Perfection The mixture is slowly cooked in copper pans under precise heat control. This process can take several hours and requires the expertise of seasoned confectioners to achieve the perfect consistency.
3. Cooling & Setting Once cooked, the hot lokum is poured into trays dusted with starch and left to cool and set overnight. This step allows the texture to develop into the soft, elastic form Turkish Delight is known for.
4. Cutting & Coating After cooling, the lokum is cut into small bite-sized cubes and coated generously in powdered sugar or desiccated coconut to prevent sticking.
